How to Make a Latte with a Manual Breville Espresso Machine

  1. Use 1/2 cup cold whole milk. 
  2. Add 1tsp of sugar in the raw to the cold milk.
  3. Steam the milk first because if you do the espresso first, the steam wand spits out hot water before it becomes steam
  4. Put a thermometer in your milk carafe and steam away. 
  5. Hold the carafe at a slight angle, and have the steam wand immersed slightly below the top of the milk. You may want to hear a slow, steady, slurping sound. 
  6. Turn the steamer off and tap the carafe on the counter to break up the bubbles if it bubbles too much. It takes practice. 
  7. Stop steaming when the thermometer reads between 140-160 degrees, but usually closer to 140. For the espresso, if you want to pack the espresso tight, leave only 1/8th of an inch at the top. Push it down hard with the bottom of the measuring spoon. 
  8. Brew the espresso and put the espresso and milk in an 8oz cup. 
  9. Use a double shot for each 1/2 cup of milk (before steaming).
